CAKE POPS/ MARSHMELLO POPS

Last weekend when I made the valentine cupcakes , I also helped make Cake Pops. I brought them to work and everyone just loved them!! Even today they are still talking about how good they are and wanted the reciepe! So I thought I would share it here as well! I dont have a picture to show you but I did post the email I sent out to coworkers.

Anna and I tried these delicious cake pops for a baby shower. A friend of ours is having a little girl. For the shower we are planning on dipping them in white chocolate and pink sprinkles. But you can do them however you’d like. Play around with it and have fun getting your hands covered in chocolate!!


Ingredients
Brownie Box mix or Cake box mix. ( follow the instructions / ingredients from the box.. eggs, veg. oil , water ect)

1 container of icing. ( if you are doing a vanilla cake.. I would stick to vanilla icing. Pick a color icing according to the color of cake)

1 bag of chocolate chips (or semi sweet chocolate melts)

Foam board ( you can find this at any craft store. Michaels/ Wal-Mart)

Sprinkles (optional)

Sticks

Directions
Cook cake accordingly. Let stand and cool. Crumble cooked cake mix in a large bowl. Add small amounts of icing into bowl. Mix cake and icing together and form small round balls.

Lay cake balls on to a cookie sheet ( I would spread wax paper on the cookie sheet first). Once cookie sheet is filled, place them in the refrigerator. Let them cool for an hour. Once chilled dip one end of your stick into the melted chocolate and stick through the middle of the cake ball. Once on the cake balls have sticks, place back into the refrigerator to cool chocolate. Once chilled, dip the cake ball into the melted chocolate covering the entire ball. Allow extra chocolate to dip off before transferring the cake ball right side up on the foam board. Foam board allows them stand. Sprinkle or decorate your cake ball before icing has cooled. Repeat as necessary. Once your foam board has filled, place back into the refrigerator to insure all chocolate has cooled before packaging.

Makes about 20-24 pops – it all depends on the size ball.

Hope this helps!! They are super easy to make.. just a little time consuming. Word of wisdom.. Don’t make the balls to big. They can be hard to form into a perfect ball and too heavy for the stick and fall off. Also keep them chilled. Helps to not melt the chocolate!!


If you dont have a lot of time to spend on baking, you can also try Marshmellow Pops. Same process. Attached them to a stick, dip in chocolate, decorate them however you'd like and allow to cool!! Yummy!

Beautiful Saturday

We got up early Saturday and headed for Tanneyhill State Park! It was soo pretty outside I wanted to take advantage of it!! Lately Birmingham has had more rain than sunshine and we all needed a breath of fresh air!! We had a blast! Playground, walking trails, ball with the dogs, and a picnic= perfect weekend!!

Dr. S

This morning Kaleb had his year ear appointment with Dr. Shirley at Children's. The appointment was at 8:30 and we were there till 10! Kaleb was about to scream he wanted to go so bad!! Being stuck in a tiny room with nothing to do or toys to play with is awful! My phone didn't have good service so I couldn't pull up Mickey Mouse for him to watch either... Luckily we had snacks and magazines.. So we ate and read stories =)

When the doctor came in he check out Kaleb's ears. He was concerned with the amount of mucus he had and his breathing (snoring). The right tube was already coming out of his ear. Dr. S wanted to go ahead and get it completely out so he could see his ear drum better and determine if he had an infection.

Holding Kaleb down for Dr. S to check his ear was terrible! He was like a wild baboon! It took me and a nurse and the Dr to hold him down. Poor baby! I felt so bad for him! Its amazing how tiny that tube is!

Turns out Kaleb does have an ear infection. Dr. S gave a prescription. We go back in a month to check on the ears again. If he still has an infection we get to put tubes back in his ears. Fun Stuff. =( I know it helps him, but I hate it.

When I went to the pharmacy I picked up some lotion for Eczema. I am hoping that works too. Poor baby will scratch his back so hard , he has scabs.

anyway wanted to have an update on Kaleb. He will be 22 months this coming Monday. They weighed him at he weighs 28 pounds. Healthy chunky monkey... just needs extra care on his ears!! I have been thinking about putting him in swimming classes.. but curious if that will mess with his ears too. Looks like I may have to call the nurse back.

Productive Weekend

I hope everyone had a wonderful weekend! I had a very productive weekend! Kaleb went to his Nana's and Big Daddy's Thursday and I didn't get him back till Sunday around 10 so I had plenty of quiet time!! =) I missed him so.. but It was so nice to be able to relax and be stress free this weekend!

From my last post you can tell I had a lot of things on my mind and a little stressed out. Well I needed  a weekend of de -stressing.. and my de -stressing project was to paint my hall bath! I don't know why but I love painting! It is relaxing to me and a joy to me when its complete! The bathroom looks incredible. Paint makes such a difference to any room. An in expensive way to make a room look clean and fresh!

I also re-potted some of my plants. They were fixing to die on me! They needed new life very bad!! I absolutely love my plants~ makes me sad when they die! I usually gain plants after someones funeral. Crazy I know but we get always get alot and split them between family members. and I love getting them! Having them reminds me of the memories we had with that person.

here are some personal touches I added on the shelf. I had Kaleb's 6 months picture in the buffet drawer wondering where I was going to hang it. I think I found the perfect place. I love the colors of the picture with the wall color.


Last Glance

Saturday night Jake and I had alittle date night. We went to Academy to pick me out a pistol. I did find one I liked but its a 9 mm bullet and I want to make sure I feel comfortable shooting that size bullet. I dont want my arm to feel like its jerked off. So I need to practice shooting Jakes pistol that is a 9mm before I go and buy that one.  After our productive gun shopping trip we stopped in La Fiestia in Hoover for dinner. Man that place is awesome!! We took a little shopping trip to Home Goods and hoover as well. One the way home our dessert was TOP THIS in McCalla. Yummy!!

Sunday I went to Church for a little bit but left to go pick up Kman.. We were so excited to get him back!! He had such a great time at his grandparents house!Did everyone watch the Super Bowl?? We got together with some friends at neighbors house.We grilled hamburgers and hotdogs. Had a great time!! Kaleb was relatively good. I had told myself we wouldn't stay long... but we lasted to half time! Kaleb just adores Mike and always has a great time.

Which commercial did you like the best? The Clydesdale's horse commercial for Budweiser ... made me tear up!! so good!
